Trending in 2025 are the Crochet Cat Ears Hats, and I decided to try this concept using Caron Simply Me Merino yarn. It's a mix of wool and acrylic, giving it a luxurious, higher-end look at an affordability that many can appreciate.
The pattern is written to include a brim or exclude it. I feel it looks unfinished without the brim.

Create an adult hat with Caron Simply Me Merino yarn that looks and feels high-end using just one ball. The sample shown is the brim version.

Notes
- Ch 2 at the beginning of each row doesn’t count as a stitch.
- The starting chain count varies depending on whether you prefer a brim. Chain 67 for no brim, or chain 83 for a flippable brim.
Ch 67 or 83. There are no stitch multiples.
1st row: RS. 1 hdc 2nd ch from hook. 1 hdc in each ch across. Turn. 66 hdc or 82 hdc.
2nd row: Using only BLO for the row. Ch 2. 1 hdc in each st across. Turn. 66 hdc blo or 82 hdc blo.
Rep 2nd row until 26 rows are complete. Fasten off.
Note: The hat is deceptive on the stretch to your head due to the stitchwork. It will seem small, but once it’s attached to the sides, it will work out.
You may not want to weave in your ends before your test, so you can either add more rows if it's too tight or subtract some if the fit is too loose.
You will end up with a flat panel that is 17.5” long (larger size) x 8” wide, unstretched.
Single crochet the two edges together. See pictures below.

The panel is just a folded rectangle. Let's begin.
Use the back hump of the chain for a much better look at the edging as it will be obvious in this project.
For the remainder of the project, use the back loops only to half double crochet across the row. It will create the elasticity that is needed for the hat.
The texture will be really beautiful, and the stitch definition terrific.
You will be creating a flat panel, and the measurements are 17.5" long with the chain count provided and 8" wide without forcing any stretch.
Fold over lengthwise so you can crochet up each side from the edge to the fold.
Single crochet both edges together from the edge to the fold area. Repeat for the other side.
Weave in your ends. If you are doing the longer version, you will fold up the hat's brim when you wear it.
